Börek with leek

The quintessential fast food in the Balkans. And yes- it can be a healthy delicious meal, you just have to make it at home.

 

 

2 leeks

3-4 eggs

300 gr feta cheese

1 tbsp za`atar( or other spice)

1 tbsp curcuma

0.5 tsp black peper

100 gr butter

10 filo pastry

 

1. Preheat oven to 190°C.

2. Mix the eggs, cheese and spices.

3. Each filo is first brushed with melted butter really good.

Spread 4-5 tbsp of the eggs mixture around the filo. Add a handful of leek, cut into thin rounds.

Roll like a carpet.

When all the rolls are arranged in the baking dish- brush the top really good with melted butter again and sprinkle with seeds( optional).

4. Bake at 190 °C ( no fan) for 30-40 minutes( until crispy and browned on top).

When it`s ready, take it out of the oven. Sprinkle with few drops of rose water and cover with cloth for 10 minutes to soften a little.

Serve hot with ayran, some sour cream or yogurt.
